Coole Swan were looking to hit the UK market with a bang and move away from the preconception of Irish Cream - something you buy your Nan for Christmas.

Beyond Cocktails developed a range of cocktails that were easy, fresh, forward thinking with zero curdling - a challenge as soon as you add acid to cream.

Cocktails included twists on Pina Colada, Margarita, Lemon Frappe. Our favourite was the Divine Swan:
